Chopping Broccoli


It sure felt like summer today. (79 degrees in March?!) So it was definitely a "salad" kind of day. I almost made my signature pasta salad, but saw this recipe the other day and decided to try it. I've had similar in the past and really liked them.


And I just loved this variation of the Broccoli Salad. Here's the recipe, with all ingredients purchased at Aldi.

Ingredients
  • 1 bunch broccoli (about 1 pound), cut into florets

  • 1/2 small red onion, chopped

  • 1 cup shredded mozzarella cheese

  • 1/4 cup of bacon bits

  • 1/4 cup dried cranberries

  • 1/4 cup sugar

  • 1/2 cup mayonnaise

  • 1 tablespoon red wine vinegar


  • Directions
    Place broccoli, onion, cheese, cranberries and bacon in a salad bowl; set aside. In a small bowl, combine sugar, mayonnaise and vinegar; mix until the sugar dissolves and mixture is smooth Just before serving, pour dressing over salad and toss. Yield: 6 servings.
